Meatballs and Sweet Potato Mash
MEATBALLS
INGREDIENTS
- 500 g Mince (beef , turkey or chicken) 
- 1 Onion (Chopped) / small 
- Ginger (pinch) 
- 2 garlic cloves (finely chopped) 
- 2 Tbsp Soy sauce 
- 1 Tbsp Oatbran 
- 50 g Ham (finely chopped) 
- 2 Tbsp Parsley (Chopped) 
METHOD
- Soften onion in a frying pan on a very low heat - do not colour it. 
- Mix all the other ingredients in a bowl then add onion. 
- Mould into small pingpong ball sized balls fry on medium to high heat (lightly spray the pan with olive oil) and cook through. 
SWEET POTATO MASH
INGREDIENTS
- 1.5kg Sweet Potato, cut into cubes 
- 2 tsp salt 
- 3 TBS butter 
- Pepper 
METHOD
- Place the cubed sweet potatoes in a large saucepan and add enough water to cover. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (when it’s easy to slide a fork in and out), about 9 to 12 minutes. 
- Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency. 
- Stir in the butter, and the remaining 1 teaspoon salt. Season to taste with additional salt and freshly ground black pepper.
